CINNAMON
Produced from the inner bark of the tropical ever green "Cinnamomum zeylanicum" cinnamon is available in Continental, Mexican and Hamburg grades. The Continental grades go from the very fine C5 special to C5 and C4; Mexican comes in M5 and M4 and the thicker Hamburg grades in H1 and H2.

CLOVES
Cloves shall be the sufficiently dried unopened whole flower buds of Eugenia caryophyllus.

BLACK PEPPER
Sri Lankan black pepper is the fruit of the vine piper nigrum, pepper from these plants is produced in two forms, as black pepper is the whole dried fruit, while white pepper is the decorticated dried fruit. It is largely cultivated in the central province of Sri Lanka .

CHILLI
Chilli is grown throughout the country and is used in almost all dishes. Chillies are of numerous variety and their degree of pungency varies. Dry and fresh Chillies are used in various dishes. Dry chilly gives a red colour and makes the dish attractive.
Chillies are used with or without stalks. To make good quality of chilli powder the stalks should be removed. It is variously called capsicum, paprika, pimento, sweet pepper, red pepper, cayenne pepper and bird pepper, depending on the type of chilli and the manner in which it is prepared and used.
