Coconut flour is made by defatting and drying coconut meat which can be used to bake high quality, gluten free, low carbohydrate food. There are numerous advantages of using coconut flour over other types of flour: Coconut flour is high in fiber and low in carbohydrates. More importantly, it has a low glycemic index.
